CARAMELISED RED ONION TART WITH GOAT'S CHEESE.

1 pack ready-made puff pasty
6 onions, sliced
1 clove garlic, crushed
2 tbls butter
4 tbls Demerara sugar
250g goat’s cheese
Egg wash made with 1 egg & milk
Flour for pastry
Preheat oven 210 degrees C or Gas mark 8


Heat 1/2 of butter, add onion & garlic. Cook until soft. Add rest of butter & heat until bubbling. Add sugar & simmer until thick. Remove from heat & cool.

Roll pastry to an even 8" square.

Place pastry onto floured baking tray & brush egg wash over outside rim of pastry.

Place on middle shelf of oven for 10 mins until pastry starts to rise. Remove from oven & using back of spoon push the centre of pastry flat so that a box is formed.

Pour onion mix over the large box. Cut goats cheese into small cubes & dot over top of tarts.

Add egg wash to rim of tart & place into top of oven until pastry finishes cooking & the goat’s cheese melts.
