The Blackberry is a bramble berry. Rich, wine-like sweetness & soft texture.

Blackberries are high in antioxidant vitamins A & C. Good source of potassium & calcium.

Store in fridge for up to 3 days. Can also be frozen.


2 tbls cornstarch
1/4 cup water
1 1/2 cups sugar
1 tbls lemon juice
4 cups blackberries
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
6 tbls butter, cold,small pieces
1/4 cup boiling water

In a large bowl, stir cornstarch & 1/4 cup cold water until dissolved. Add 1 cup sugar, lemon juice, & blackberries; combine gently.Put into a skillet.
In a bowl, combine flour, sugar, baking powder, & salt. Blend in butter. Add 1/4 cup boiling water & stir until soft dough.

Bring blackberry mixture to a boil, stirring. Drop spoonfuls of dough onto boiling mixture. Bake the cobbler on a baking sheet (line with foil) in centre of preheated 400 oven for 20-25 mins. Serve with vanilla ice cream or whipped cream.
