BASIL & MUSHROOM CUPS

1/2 of a 17.3-once package Puff Pastry Sheets (1 sheet), thawed
1 tbls butter
3 cups mushrooms, cut into 1/4
1 small onion, chopped
2 cloves garlic, minced
2 tbls grated Parmesan cheese
1 t-spoon dried basil leaves, crushed OR 1 tablespoon chopped fresh basil leaves

Heat oven to 400F.
Heat butter in a 10-inch skillet over medium heat. Add mushrooms, onion & garlic & cook until tender & the liquid is evaporated. Remove the skillet from heat. Stir in cheese & basil.

Unfold pastry sheet on a lightly floured surface. Roll pastry sheet into a 15x12-inch rectangle. Cut into 20 (3-inch) squares. Press squares into 20 (1 1/2-inch) mini muffin-pan cups. Place about 1 tbls filling into each pastry cup.

Bake for 15 mins or until the pastries are golden brown. Let the pastries cool in the pan on a wire rack for 10 mins.
