TURKEY WITH PARSLEY & GARLIC BUTTER

TURKEY
4.5kg/10lb turkey crown,
1 onion,cut into wedges
fresh parsley
6 garlic bulbs

BUTTER
75g/3oz soft butter
2 garlic cloves, peeled & crushed
2 tbsp chopped parsley

TO GARNISH
4-6 garlic bulbs
parsley & lemon wedges to garnish
Preheat oven 190C/375F/Gas Mark

Cream butter until really soft & add crushed garlic & parsley & blend.

Gently placing your forefinger at one side of the neck and pushing upwards, until the skin is free, smear the flavoured butter over the flesh & cover with the skin & secure the neck flap with skewers.

Place turkey upside down in a roasting tin & place the onion, garlic bulbs & parsley into turkey. Cover with foil and cook. (Allow 20 mins per kg plus 90 minutes). Turn the right way up 30 minutes before end of cooking time and discard the foil.

Once cooked, remove the turkey & leave for at least 15 minutes. Garnish & serve with the roasted garlic and the freshly cooked vegetables.
