Mushrooms - Flat

A good source of dietary fiber, low in fat, no cholesterol, rich in folic acid, nicotinic acid, potassium, iron, copper. Rich in vitamins B1, B6 & C & 80-90% water.


4 Eggs .
1 clove garlic, chopped
4 pieces of bacon chopped
1 oz butter
10 oz homemade breadcrumbs
Salt & black pepper
4 flat mushrooms
4 oz Gruyere cheese

Gently cook garlic & bacon in some olive oil & butter.
Add a little more butter.- to 1 oz to the pan
Add breadcrumbs & allow them to soak up butter.
Season with salt & pepper.
You could add some fresh thyme or sage at this stage if available
Wash & dry the mushrooms.
Fill mushrooms with the bread & bacon mixture & sprinkle cheese on top.
Place in a hot oven & cook for 8-10 mins.
In the meantime poach the eggs.
When the mushrooms are ready, remove from oven & top with an egg.
Season again then pour over a little warm olive oil.
Serve with some crusty bread & crispy salad.
