Broccoli is high in vitamins C, K,& A.

Serves 4

350g penne
50g ciabatta bread,torn
2 tbsp olive oil
20g Parmesan,grated
1 small onion,chopped
250g broccoli, cut into bite-size chunks
2 garlic cloves, sliced
1/2 large red chilli, deseeded & chopped
25g sultanas
3 tbsp chopped fresh parsley
Grated zest & juice of 1 lemon

1.Cook the penne.

2. Preheat grill & line grill pan with foil. Mix the torn bread with half the oil in a bowl & season with black pepper. Spread onto grill pan & grill for 2-3 mins, turning. Cool & transfer to a blender & whizz to coarse crumbs. Stir in Parmesan.

3. Heat remaining oil in a frying pan. Add onion & cook for 5 mins, until softened. Add broccoli, garlic, chilli & sultanas & cook for 5 mins, stirring, until broccoli is tender.

4. Drain pasta & add to pan with parsley,lemon zest & juice. Season, toss, then divide into 4 bowls. Top with toasted Parmesan crumbs.
