This cucumber is low in Saturated Fat, and very low in Cholesterol and Sodium. It is also a good source of Vitamin A, Pantothenic Acid, Magnesium, Phosphorus and Manganese, and a very good source of Vitamin C, Vitamin K and Potassium.

Serves 4

1 tbsp extra virgin olive oil
1 tsp wine vinegar
1 clove garlic, peeled and crushed
5oz/150g plain yoghurt
2in/5cm cucumber, peeled and finely diced
2-3 sprigs fresh mint, finely chopped

1. Combine the oil, vinegar and garlic in a bowl and beat with a fork. Transfer to a blender, add a few drops of water and blend until creamy.
2. Add yoghurt and beat until well mixed. Add the cucumber, salt and mint and mix well.

Serve chilled with fried vegetables such as courgettes and aubergines, with roast chicken or lamb, or on its own with bread and black olives as part of a mezze
