Cabbage - Red


2 lb red cabbage
1 lb cooking apples, peeled, cored & chopped
1 lb (450 g) onions, chopped
1 clove garlic, chopped
whole nutmeg, freshly grated
level tspoon ground cinnamon
level tspoon ground cloves
3 level tblsp brown sugar
3 tblsp wine vinegar
oz (15 g) butter
salt & freshly milled black pepper
Pre-heat oven gas mark 2, 300F (150C).

Cut cabbage into quarters, remove hard stalk. Then shred the rest of cabbage

In a large casserole,put a layer of shredded cabbage seasoned with salt & pepper, then a layer of onions & apples & sprinkle garlic, spices & sugar.Alternate layers until all in. Pour in wine vinegar, add dots of butter on top.

Put lid on the casserole & cook slowly in oven for 2-2 hrs, stirring twice during cooking.Serve
