LEMON & CHILLI SESAME PORK WITH MANGETOUT
Serves 2

100g sesame seeds
olive oil
2 shallots , sliced
2 red chillies ,deseeded & very thinly sliced
zest & juice 1 lemon
350g pork fillets,or loin, sliced into strips
knob of butter
trickle sesame oil (optional)
100g mange tout

1.To pre-cook mangetout, snap away & discard the tops, then plunge into boiling salted water for 1 min before draining & set aside. Heat a wok or frying pan, add sesame seeds & 'toast' until golden brown. Spoon into bowl & set aside.
2.Add a splash of olive oil to pan & fry shallots, chilli & lemon zest over a medium heat for 2 mins until shallots begin to soften. Season pork with salt & pepper. Increase the heat in the pan, add pork & fry for 2 mins until pork is golden brown. Stir in mangetout, sesame seeds, butter & lemon juice (using half if it's a juicy fruit). Finish with a trickle of sesame oil, if using.
