Asparagus is high in Folic Acid a good source of potassium,fiber,vit B6,vit A & C,& thiamin.
Asparagus has No Fat & No Cholesterol.

Eat within 2 days of purchase & store in fridge.

Serves 4

275g streaky bacon, cut into pieces
200g asparagus tips
4 eggs
1 x 50g bag wild rocket
1 tbls red wine vinegar
2 tbls olive oil
1 shallot,chopped
Pinch of sugar

Heat frying pan over medium heat & dry-fry bacon until crispy. Remove.
Add asparagus & cook for 4 mins.
Bring large pan of water to the boil.Break egg into cup & gently lower into water. Repeat with another egg, put lid on & poach for 34 mins.
Scoop out with a slotted spoon & repeat with the remaining eggs. In a bowl, mix vinegar, oil, shallot & sugar & toss with bacon, asparagus & rocket.
Divide into 4, topping each one with an egg & season with black pepper. Serve with crusty bread.
