Lettuce-Baby Leaf Salad

The baby leaf salad is not treated with any preservatives so has a short shelf life. Keep it in a bag in the fridge & use within 3 days.

Contents of baby leaf salad vary but generally include rocket, baby spinach & red chard.

8 onz bacon
1 egg yolk
2 teaspoons Dijon mustard
2 garlic cloves, chopped
1/2 cup freshly squeezed lemon juice
2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1 1/2 cups olive oil
1/2 cup grated Parmesan, plus 1/4 pound chunk of Parmesan

Preheat oven to 400 degrees F.
Lay bacon on tray, bake for 20-25 mins, then dice.

For dressing, put egg yolk, mustard, garlic, lemon juice, salt, & pepper into bowl of food processor. Process until smooth. Wilst running, slowly pour the olive oil through the feed tube & process until thick. Add 1/2 cup grated Parmesan & pulse 3 times.

Toss lettuce with dressing . Shave Parmesan & arrange on the lettuce. Sprinkle diced bacon over.
